Our story

Three generations behind the grill.

Javier Ruiz opened Cotijas Taco Shop in California in 1983. His son Oscar grew up there, grating cheese, rolling taquitos and washing pots, dreaming of a place of his own.

In 2007 Oscar and his wife Rosie opened Oscar's Fresh Mex in Franklin, Tennessee. One location became seventeen, and Oscar's brothers, sisters, nephews and nieces run them with him today.
